The fish is fully grown in the company's recirculated aquaculture systems (RAS) located in Denmark, which have a capacity to grow 300 metric tons of fish a year, although at the moment the annual output is 100 metric tons.

The hybrid species is ranked as "Best Choice" by Sea Choice due to its relatively light environmental impacts.

Biofarm began production in 2016, selling the species to different markets but with a focus in Europe, where the species is not popular yet. In the United States the fish is widely consumed in sushi and sashimi formats.

The recirculated water ensures that the fish is not infected with diseases or parasites, and therefore it does not need to be frozen before being served raw, Lars Bach, managing director at the company, says. "This fish is very stable and there are way fewer mortalities with this species than what we have experienced with other species on a daily basis," Bach said.

"We have whole weeks without a single dead fish in the whole production." The company has not reported any significant die-offs since it started producing the fish in November 2016. The firm is reaching out to potential clients with samples of the unknown fish and is selling small amounts to different countries.

The species is unknown for most European consumers.

"The biggest challenge is to get into the market now that we have a new fish for Europe, but so far we haven't had a single person who didn't like the taste of the fish," Bach said.

Although the land-farmed fish presents less biological difficulties than other farmed species, the high-protein feed adds an extra cost to the company's expenses.

In 2017, Biofarm's turnover was ?470,000 ($575,153).
